I have an i7 3770K with 32GB RAM, AMD 7870, SSD + 2 HDs... 550W PSU.
And my HP Z400... Xeon W3550 (a 130W processor) with 8GB RAM, ATI FirePro V5800, 2xSSDs and 2xHDs... 475W.

Still, better safe than sorry. I’d rather trust wasting power than an overloading PSU. I have an 875 and it’s already at full capacity.

When I finally built my own pc I bought an inexpensive EBay pc that had most of the parts I wanted. For whatever reason, the owner also sent an unused 1250w (or somewhere in there) Corsair Pro series PSU. I’ve been using that and I’m only running a 3570K and a 770 with no plans to SLI, so you’re good yet!
